@Daniel

Curiosity, despite the old saying, is essential. So I am happy to explain myself.

1) I wrote this before I was aware of Cake's built in mailer, and I continue to use it since I have heard of smtp issues and such from those who use the cake mailer.

2) The duplicate code is definitely an area to improve, and exists only because I started with the one, and then added the other two without first considering my OO principles :(

Just curious, but why don't you use the built-in Email component?

One thing you probably could improve is the code ducplication. All three methods use basically the same code.
